The Phin consists of a perforated plate that is fitted over a coffee mug. This brewing chamber sits atop a plate that is used to compress and trample the grounds. A cap is additionally used to ensure that heat does not escape the chamber. The grounds are compressed until they are about the size of table salt at which point hot water is added to the mix, and the coffee begins to slowly drip out of the filter until the cup is full.

How to use Phin Filter:

  • Add 2 tablespoons of ground coffee 
  • Drop the filter press on top of the coffee
  • Place the plate and chamber (filled with coffee) on top of a cup
  • Boil water 195-200 degrees F
  • Add 0.8 ounces (or cover the filter press by ½ inch) of hot water
  • Let bloom for 30 seconds
  • Then fill water to the top of the Phin (total of 4 ounces)

The first drip should happen before 2 minutes

The last drip should be around 5 minutes

If you can adjust the grind size to achieve the flow of the first drip by 2 minutes and the last drip by 5 minutes, then you’ve got a solid brew.
